This Zucchini Casserole is simply "magnifico". Love that I get to use so many fresh vegetables from my garden, zucchini, tomatoes, parsley and basil. The use of cracker crumbs adds an interesting layer of flavor. This casserole is hardy enough to be served as a main course with a tossed green salad on the side. Go to your garden, or favorite farm stand, and pick up what you need for this wonderful casserole.
