Slow Cooker Doritos Casserole
This Slow Cooker Doritos Casserole is a delicious twist on the popular Doritos casserole. This Mexican chicken casserole is made of chicken, enchilada sauce, Monterey Jack cheese, Nacho Cheese Doritos and sour cream. The best part of this dish is that everything is slow cooked, which allows time for all of the Mexican flavors to develop and makes it easy to prepare.
Even though it may seem odd to top everything off with cheese-flavored chips, they add extra crunch and flavor to this robust meal. Simply let the chicken and enchilada sauce cook in the slow cooker all day, then stir in the remaining ingredients and dinner is served!

I saw 'Doritos' and immediately lit up - this looks SO good. I am a huge fan of olives, but a lot of my friends are not. I plan on putting these to the side!

Oh yeah, my family will love this recipe! I cook chicken breasts in my slow cooker often because they make great taco, nacho, enchilada, and burrito fillings. I am adding this to next week's menu and picking up the ingredients today. We will enjoy this with toppings of lettuce, tomatoes, sour cream and guacamole.

Yummy sounding recipe for sure! I will definitely add this casserole to my list of dishes to try very soon. Just the thought of cooking the chicken in enchilada sauce sounds great to me. The only alteration that I would likely make is swapping out the Nacho Cheese Doritos for plain tortilla chips. I think just doing that alone would take care of cutting the calories and sodium to a more acceptable level. I would think that you could easily make this with either ground beef or ground turkey, but I would cook those meats in a skillet first and then add them to the slow cooker.

This was a huge hit with my family. I'm going to add it to my short list for family dinner. And I'm definitely going to make it for the next church potluck. I know it will go over well there. Has anyone tried it with ground beef? I THINK it would also taste great with that alteration.
