Chipotle Burrito Casserole
"Go ahead and stock your freezer with this simple vegetarian Chipotle Burrito Casserole. In no time at all you can have 3 or 4 meals at the ready for some those crazy busy days. Made with rice, black beans, veggies and a bit of cheese, this casserole is healthy too. We like this casserole stuffed into tortilla shells for veggie burritos. Also works as a easy and filling side dish. I usually divide the recipe into 2 portions (freeze one and serve the other). One half will feed our family of 4 for dinner with enough leftovers for lunch the next day."
