Cheesy Cheesy Chili Dog Casserole
Chili dogs bring back memories of carnivals and events from childhood. So, if you are feeling nostalgic and hungry, cook up Cheesy Cheesy Chili Dog Casserole. Ingredients
- 1/2 pound ground beef, lean, browned and drained
- 1/2 cup chopped onion
- 1 (8-ounce) can tomatoes with green chiles
- 1 (10-ounce) can tomato sauce
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 thai chile pepper
- 1 teaspoon chili powder
- 2 teaspoons sugar
- 1 teaspoon salt
- 2 packages extra-large butter-flavored refrigerated biscuits
- 1 pouch hot dogs
- 2 cups sharp Cheddar cheese, shredded,
- 1/4 cup onion, chopped
- 16 1/4-inch pieces sharp Cheddar cheese
- 2 green onions, chopped for garnish
Instructions

Preheat oven to 350 degrees F. Spray or grease a 9 x 13 -inch baking dish.

Place ground beef, onion, tomatoes, tomato sauce, kidney beans, thai chile pepper, chili powder, sugar, and salt in a 7-cup rice cooker and cook until unit switches to "warm." (If making on stovetop, add the ingredients previously mentioned to a large saucepan, bring to a boil, reduce heat, and simmer until juice is reduced by about 50 percent).

Cut hot dogs in half crosswise. Make a slit on the top of each hot dog half and insert the cheese slices. Set aside.

Open biscuit rolls. Flatten each biscuit slightly. Place a cheese-stuffed hot dog portion in each biscuit and about a teaspoon of chopped onion. Bring ends of biscuit up around hot dog and seal.

Place chili in baking pan. Top with biscuit-wrapped hot dogs, covering the top of the casserole. Sprinkle with one half of the shredded Cheddar cheese.

Bake for 30 minutes, or until biscuits are brown and crusty on top. Add remaining half of the shredded cheese. Bake for an additional 5 to 10 minutes. Garnish with chopped green onion.

Recipe peeked my interest but there are no hot dogs in ingredient list.

This is a really good recipe. We'll get Wendy's chili fairly often for use when we're making up chili dogs (far better than the canned mixes we've found) and this is a great alternative. I had never thought of making chili dogs as part of a casserole before, and I'm really looking forward to giving this a try. I can easily imagine whipping up one of these for a potluck, since I'm sure it would definitely go over well. Thanks for posting this!
