You sure can get the kids to eat some veggies with this dish because you can put anything from shredded spinach to peppers to carrots or zucchini in this dish. Sloppy joes covers up the taste that most kids don't like in veggies and you can get a whole day's worth of important nutrients in one serving or so.

I absolutely love the idea of this one dish sloppy joe casserole. I haven't had a sloppy joe since I was a kid but this really brings it up to an adult meal. I love the idea of adding vegetables to the meat and truly making it a one dish meal. Have you tried freezing it?

Hi kenziewood, we haven't tried freezing this recipe, but it would probably work if you froze the meat filling without the biscuits on top. When you're ready to make it, let the filling thaw in the refrigerator and then top it with the cheese and biscuits just before baking.
