Thank you for putting the variations along in the recipe. Many times, I will just use what I have in the fridge instead of making a special trip to the grocery store if we are busy that day. I try to make it a three times a week or less schedule for fresh produce and such. I am ready to try this dish this weekend!

All the things that I look for in a casserole are in this recipe. It's simple and easy, it's made with ingeedients that aren't expensive or impossible to find, it's tasty and filling, and it carries well to a pot luck. This recipe is definitely a keeper and getting pinned!
