This Ground Beef Zucchini Casserole is a great weeknight dinner that is full of flavor and fresh ingredients. It's cheesy and beefy and loaded with wonderful fresh zucchini. My only change in the recipe was I substituted Ricotta cheese for the cottage cheese (just a personal preference) Don't forget the crispy Italian bread on the side.

This recipe calls for 1/2 cup of salt ???? Is this a typo or does it really call for 1/2 cup of salt. Seems like a bit much to me. For now I'll look for another recipe for my zucchini
