Who doesn't need a good Mexican dish or two on the menu each week ? I love Mexican Monday or Taco Tuesday in our house. You can add some veggies, a salad or some nachos and dip to have a complete meal that everyone will want you to make again and again. Great inspiration for those nights when you have no idea what to make from ground beef.
