I love eggplant, and this Beef and Eggplant Casserole truly highlights the eggplants wonderful flavor and texture. I love how it is not overly "saucy" like typical eggplant parmesan recipes. I served this with a tossed green salad and, of course, crispy Italian bread on the side. Makes a great weeknight dinner or even a great brunch with the girls.
