A name like, "Funeral Potatoes," might scare you a bit, but you have nothing to worry about. This is a cheesy potato casserole recipe that gets its name from the place where it is often served - funerals. This easy hash brown casserole is great for travel, so bring it to an upcoming potluck. Friends and relatives will thank you for bringing it with you. It is also a great dish to have at Easter and can be made with or without a crunchy topping. These wonderful potatoes are creamy and comforting; they are everything a potato casserole should be.

A delicious potato casserole. It travels easily. The last time I made this for a pot luck, it was all gone before I even had a taste. Mine got the most beautiful golden crust on top. I make it with cream of mushroom or cream of celery soup so the vegetarians can eat this.

I use French's French Fried Onions for the topping. Delicious! Just sprinkle them on and return to oven for 5 minutes. My daughter loves this!
