Is the oil extremely necessary to this recipe, or can I swap it out for a little applesauce? I love carrot cake, and I have been searching for a really moist recipe to make for my mom. She said my aunt used to make this delicious carrot cake every year that was so moist it just fell apart in your mouth. I want to find a similar recipe to take her on a trip down memory lane.
