I like that this recipe calls for coconut milk. This is one ingredient that I'm sure gives this bread pudding a tasty alternative to evaporated milk. I reckon that you could get a similar result with evaporated milk and a teaspoon of coconut extract if you cannot find coconut milk. I know some of my friends have trouble finding it depending on where they are located.
