Sweet Potato and Kale Egg Bake

Sweet potato recipes are most commonly side dishes, but not always. Sweet Potato and Kale Egg Bake is a lovely breakfast casserole that's filled with yummy ingredients that are good for you, too. It takes awhile to make (though most of that time is spent baking), so it's not recommended you make it before work. It reheats well, however, so make it in the evening (for dinner perhaps), and enjoy the leftovers in the morning.
