- 1 teaspoon Canola Oil

- 1 medium Yellow Onion, peeled and chopped
- 1 medium Bell Pepper (any color), seeded and chopped
- 6 ounces Sliced Mushrooms, chopped
- 2 cloves Garlic, peeled and minced
- 5 Sprigs Fresh Thyme, leaves picked from stems

- 1/8 teaspoon Ground Nutmeg
- 1 cup Shredded Swiss Cheese (about 4 ounces)
- 4 Eggs, beaten
- 1 teaspoon Dijon Mustard
- 1 cup Milk
