I love the pancake layer at the bottom of this breakfast casserole! It gives a touch of sweetness to it, which pairs nicely with the saltiness of the cheese and bacon. It also makes it less messy to eat! It makes a great grab and go breakfast since you can cut it into squares and hold it from the bottom like a piece of pizza! The different layers are really pretty too.
