Ingredients
- 1 pound wide egg noodles
- 1 pound lean ground beef
- 1 cup chopped onion
- 1/2 teaspoon dried thyme
- 8 ounces button mushrooms, sliced
- 1 cup beef broth
- 1 tablespoon tomato paste
- 8 ounces sour cream
- 1/2 teaspoon salt
- 2 cups shredded mozzarella cheese
- 1/2 teaspoon fresh ground pepper
- 2 tablespoons chopped parsley for garnish, optional

Preheat the oven to 350 degrees F. Lightly spray a 9 x 13 inch baking dish with cooking spray.

Place a large stockpot filled with at 4 quarts water and 1 Tablespoon salt over high heat. When it comes to a rolling boil, cook noodles for the time specified on the package. Drain.

While water heats and pasta cooks, place a 10 or 11 inch x 3 inch deep pot over medium high heat. Add the beef and cook until it is no longer pink, breaking up chunks with the back of a spoon.

Use a slotted spoon to remove meat, but leave any fat and juices in the pan. Over medium heat, cook the onions and thyme in the same pan about 2 minutes until onion is translucent. Add mushrooms and continue to cook on medium high heat, stirring until liquids have released from the mushrooms and then evaporated, about 5 minutes.

Return meat to the pan, add broth and tomato paste and stir over medium heat 2 minutes.

Off heat, stir in sour cream and salt and pepper. Add noodles to the pan and stir, then add meat and about half the mozzarella, stirring just to combine. Pour into prepared bake dish and sprinkle with remaining cheese. Cover with a piece of foil which has been sprayed with cooking spray and bake 25 minutes. Remove foil and continue to bake until lightly browned, about 10 more minutes.

This casserole is great in taste but overflowing with noodles. I doubled this recipe to freeze some smaller servings. The meat disappears in an ocean of noodles. I would have to double the amount of meat the next time or reduce the amount of noodles to half the amount. I would prefer other cuts of cooked beef bite size rather than ground beef.

This is close to the stroganoff recipe my mother used to make, though the cheese and the tomato paste are definitely new ingredients to me. I'll have to try it with the tablespoon of tomato paste and see if it does heighten the overall flavor. I'm fine with the cheese, since I'm known for adding cheese to almost anything I bake. I'd probably go ahead and add some Parmesan along with the mozzarella, though the white cheddar is certainly an idea worth trying.

I like the sound of this recipe a lot. I also like FaveSothernRecipe s Editor's idea about adding the tomato paste. I can see where that would be helpful, but I like the flavor of the white cheeses and such, so I was thinking a little freshly grated Parmesan might do the trick or a little white cheddar cheese, thoughts?

my mother has made something similar to this for years, she browns the hamburger, drains it and puts it back in the pan, boils the noodles, to the pan with the ground beef, she adds a can of cream of mushroom soup and a 16oz container of sour cream, then the noodles. its one of my favorites

I made this and found that I did not use all the noodles called for, it was just too many, used the rest for another time. The recipe was very good otherwise. I made it one day all except the sour cream and finished baking and all the next day, worked just fine.

This was a great casserole for a weeknight dinner. It is packed with flavor and serves a crowd. Next time I would add a little roasted garlic to enhance the flavor further.

This casserole wasn't quite as good as the stroganoff of my childhood (we made it with beef tenderloin), but it was a hearty casserole that came together quickly.
