I've tried quinoa and liked it, but never thought about using it as a substitute for pasta in a macaroni and cheese dish. The recipe looks really simple and reminds me of some rice and cheese recipes I've tried. The recipe could use some more spices and I'll have to experiment with some to figure out what works the best for us.
