This recipe sounds easy enough to make and very creamy. Do you add the cream cheese and cottage cheese slowly to keep from cooking them, or is it cooled off enough when you get to this point that it is okay with the tomato soup and then the addition of the cheeses?

For me, beef stroganoff has always used sour cream and mushrooms, so I was surprised to see them deleted. Mushrooms I can understand, since they're not everyone's cup of tea. But the lack of sour cream posed an interesting question. The cream/cottage cheese combo does strike me as being a decent substitution and the tomato sauce addition provides an intriguing tang. I would definitely add back in at least some mushrooms, just for completeness.
