As a vegetarian turned vegan for over a decade now, Lauren has heard everything there is to say about the vegan lifestyle. Not many doubt the health benefits of such a diet but many do express concern over whether vegan food offers enough options or tastes any good. Lauren's adventures with eating vegan happened at the same time that she and her husband started a family. She was learning how to substitute chia seeds for eggs in her baking recipes while balancing a baby on her hip. Now, with three children under the age of 7, Lauren is on a mission to create healthful, delicious vegan food that fits into the busy schedules of families. Even better, these dishes have been tested and kid-approved by her little ones. Thus, the name of her blog, One Happy Table, invites kids and adults, family and friends, vegans and omnivores, to all pull up a chair and feast at one happy table!
