Easy Pierogi Casserole
This mashed potato casserole has the great flavor of pierogi but doesn't require any of the work. Easy Pierogi Casserole is perfect for when you're craving these delicious dumplings because it can be put together in a snap. Cooked lasagna noodles are layered with mashed potatoes, cheese, and bacon before baking for forty minutes. This recipe is a great substitute for pierogi, but it also makes a great alternative to Italian lasagna. As an added bonus, this casserole can be made vegetarian by leaving out the bacon.

I make a different version of this using sauerkraut cooked with pork spare ribs. I use the kraut and rib meat in between the layer of lasagna noodles along with chopped onions that have been sauted in butter. I finish with topping the noodles with the sauted onions and bake. It reminds me of my Mom's kraut and pork pierogi.
