I like that there are options for spicing this up, depending on the salsa and cheese used. I've used Bisquick as a base before, as well as using refrigerated biscuits for the bottom layer. I usually put a layer of cheese on top of the biscuits before adding the ground beef. I like the addition of the Mexicorn and I really should use that more often in some of my dishes. I think a black bean and corn salsa would also work very well with this.

I love Bisquick recipes. They save a lot of time and a lot of buying separate ingredients. My family loves to have something like tacos, nachos, burritos, or enchiladas once a week, so this dinner will be in next week's menu. Thank you for the easy and delicious looking dinner idea.

Eeeew! This looks so yummy! This could even become comfort food! It would be so easy to drop the sodium in this recipe to meet my family's needs too. I'd use my own biscuit mix, low sodium salsa, my own low sodium of mexicorn and my low sodium taco seasoning. I think I see this on our menu soon!
