How come you use an egg and an egg yolk in this recipe instead of two egg yolks or two whole eggs? I do not understand what it does for the recipe. I think it sounds amazing. I cannot wait to make them because my mom makes a similar recipe with fewer ingredients and I love it, so I know these will become a favorite.

Hi SissieSass, egg yolks are used alone in recipes with dense texture, like the base of these coconut bars. The additional egg yolk also adds flavor. I hope that helps! - Natalie, Editor of AllFreeCasseroleRecipes

I made these over the weekend and they were truly awesome! I used more coconut than the recipe called for and it still wasn't enough, so next time I might add a dash of coconut extract. I also only used 3/4 cup of powdered sugar in the cream cheese mixture and they were just sweet enough. These bars tasted especially amazing with a cup of coffee!
