One-Bowl Chicken Casserole for Two

Making hearty and flavorful casseroles can be a challenge when you only need to feed one or two people. One-Bowl Chicken Casserole for Two is the perfect recipe to make if you only want to feed a couple of people without a lot of fuss.

It's hard to justify dirtying a ton of dishes when only a few people are eating, so you'll be glad when this easy casserole recipe leaves you without a sink full of dishes to wash. Casseroles for two also allow you make more meals that are fresh, since you won't be working your way though all those leftovers.

If you love chicken and potato casseroles, then this is one recipe that you must try for yourself. A hearty combination of chicken, potatoes, peppers, and onions give the casserole its great flavor. Plus, you can't beat a creamy sauce that combines sour cream, cream cheese, cream of chicken soup, and ranch seasoning. This recipe calls for poaching a chicken breast, but you could easily use leftover chicken or store-bought rotisserie chicken.

Ingredients

  • 1 (8-ounce) chicken breast
  • 1 cup from a can of cream of chicken soup (see note)
  • 3 tablespoon sour cream
  • 2 ounce cream cheese, softened
  • 2 tablespoon milk
  • 1 tablespoon from a packet of Ranch seasoning mix
  • 1/4 teaspoon fresh ground black pepper
  • 2 to 3 drops Tabasco sauce (or to taste)
  • 2 cup frozen hash browns with bell pepper and onion, thawed
  • 1/2 cup shredded Cheddar cheese
  • 12 to 16 butter crackers (such as Ritz), crushed
  • 2 teaspoon melted butter

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 2-quart baking dish or two 4-inch ramekins with cooking spray. 

  2. Place the chicken in a small saucepan and cover with water. Bring to a low boil and cook 3 to 5 minutes. The chicken may not be completely cooked at this point, but it will finish cooking in the oven. Drain and dice the chicken; you should have about 1 1/2 cups.

  3. In a medium mixing bowl, combine the soup, sour cream, cream cheese, milk, and seasonings. Sir to mix then add the hash browns, chicken, and Cheddar cheese and toss well. Spoon into the baking dish or dishes. Top with the crushed crackers and drizzle butter on top. 

  4. Bake 25 to 30 minutes until the top is lightly browned and bubbly.

Notes

The leftover cream of chicken soup can be placed into a freezer-weight plastic bag and frozen for later use.
