Amber has found that many people she comes across think "diet" is a Four-letter word. They commonly misconcieve that living a healthy lifestyle means eating very little bland and boring food, such as plain chicken and empty salads, and cutting out your favorite things, like chocolate and ice cream.
Her goal with her blog, Chocolate Broccoli, is to encourage readers to get back in the kitchen and lose the crazy thought that taste and nutrition can’t happily coexist. No food is considered off-limits. She encourages readers to avoid the "diet" mentality and learn to appreciate real food. She wants people to know how darn easy it is to eat and cook in a healthy way.
She doesn't tell you to completely change your entire lifestyle - dropping all that you learned from your up-bringing to go "all organic" from specialty designer grocery stores (but by all means go ahead, do so if you choose so!). She is not talking about going crazy with calorie counting, measuring portions, or giving up all your favorite foods- she just suggests that you eat well.
That being said, she doesn't expect you to become Top Chef or The Next Food Network Star. What she wants is you to learn how to incorporate a few healthy staples into your everyday diet. Most people's diets generally maintain a good track record. Amber provides some simple tweaks in stride to help win with healthy living.
